A Lobster Boil with Chef Ryan McCaskey
“The hallmark of a great Châine dinner is that it gives us something different than what we would normally get at a restaurant,” explained Conseiller Gastronomique des Etats-Unis Mon Roldan as he introduced Chef Ryan McCaskey, mastermind of the “Lobster Boil” theme for the Chicago Bailliage’s dinner at his 2-Michelin-starred Acadia. “Tonight, we’re going to give you a little taste of Acadia,” said Chef McCaskey, “and a little taste of Maine.”
In fact, the chef’s childhood in Maine has served as the inspiration for Acadia’s décor and contemporary tasting menu since its opening in 2011. Many ingredients found on Chef McCaskey’s ever-changing tasting menus are sourced directly from the Deer Isle area, specifically Penobscot Bay and the surrounding islands.
But rather than presenting Châine members and guests with a typical Acadia tasting menu, Chef McCaskey treated the guests to a multi-course dinner that was a playful take on one of his favorite ingredients: the Stonington lobster, dubbed “the best lobster in Maine.” This luxury ingredient found its way into three courses: a bite-sized lobster roll appetizer, aromatic lobster bisque, and the grilled Maine “lobster boil,” which served as the centerpiece of the meal. Each course was carefully paired with some of the finest wines from the Chicago Châine’s cellar, creating a simultaneously fun and luxurious dining experience.
The festive atmosphere of the evening served as the perfect backdrop as three long-time members were recognized as Silver Commandeurs: Vice Conseiller Culinaire Christopher A. Koetke, Vice Echanson (Hon.) Michael D. Belsley, and Maîtres Restaurateur Marc A. Magiera.
