Update (May 21, 2019) - FOOD & WINE Editors name Kumiko one of the USA’s 10 Best New Restaurants of 2019!
Creative Director Julia Momose, Executive Chef Noah Sandoval, and Chef de Cuisine Mariya Russell
Chaîne Zen at Kumiko
Over two successive mid-June evenings, Chaîne Chicago found refuge from the frenetic West Loop dining scene at Kumiko, a Zen-filled epicurean haven that proved perfect for the 2018-19 season finale.
As members entered the dining room, they admired the serene Japanese aesthetic, including screens constructed of geometric wooden designs using the ancient “Kumiko” art form that Creative Director Julia Momose grew up with in Japan before emerging as one of Chicago’s most celebrated mixologists. Julia and General Manager Cara Sandoval greeted and treated guests with world-class hospitality that members know well from Kumiko’s sister establishment, the two-Michelin-starred Oriole.
Kumiko humbly fancies itself an “intimate cocktail bar,” but food here is far from an afterthought. Among its myriad accolades, Food & Wine magazine selected Kumiko as one of America’s top-five new 2019 restaurants. Executive Chef Noah Sandoval (who also helms Oriole) and Chef de Cuisine Mariya Russell have crafted refined cuisine that creatively complements the extraordinary cocktails and other liquid delights curated by Julia and expertly delivered by dapper barman Sammy Faze and company.
Chaîne Chicago’s omakase menu showcased silky Hudson Canyon scallops, flavorful Ōra King salmon and melt-in-your-mouth A5 Miyazaki Wagyu beef. The meal concluded with astonishingly delicious Japanese Milkbread accompanied by fermented honey ice cream and copious truffle shavings. Each of the six courses was expertly matched with a thoughtful beverage, including prized sakis and superlative wines.
Kumiko is much more than a serene cocktail bar that serves tasty bites. Its devotion to Zen also involves being present in each customer interaction, being passionately dedicated, and delivering elegance and grace in every detail. The result is a sublime sanctuary that offers an enlightened balance of Japanese-inspired drinking and dining that members will never forget.
