On May 15, 2017, 68 Chaîne Chicago members and guests celebrated the reopening of Arun’s, the legendary Thai fine-dining destination in Albany Park. World-renowned Chef Arun Sampanthavivat reportedly shuttered his eponymous fine-dining Thai restaurant permanently in late 2016; however, Chef Arun obtained financing that enabled him to extensively remodel and update the interior of his 32-year-old establishment. More importantly, Arun has returned to the kitchen as executive chef, a position that he left in 2005. Confréres were thrilled to experience how he has elevated and refined Arun’s imaginative cuisine.

The evening commenced with a convivial Champagne reception that spread throughout the restaurant, enabling guests to admire the exquisite artwork now adorning the space. Over the next four hours, servers presented a memorable 12-course dinner showcasing complex spicing and intricately balanced flavors and textures in jaw-dropping presentations—even the garnishes were fantastic works of art. Excellent wines from the Chaîne cellar paired beautifully with the cuisine.

As the evening concluded, Chambellan Provincial/Bailli Mon Roldan acknowledged and thanked Chef Arun and his crew with a Chaîne plaque. Chaîne Chicago was privileged to partake in the very personal culinary vision of Chef Arun, which both preserves and advances Thai gastronomic traditions.
