Over two successive nights June 15-16, 2015, Chaîne Chicago concluded its 2014-15 season with tours of Eataly, the largest in an international chain of Italian food and beverage emporia that houses twenty-three eateries, a massive marketplace and culinary classrooms.
The evening began in Birreria, Eataly’s brew-pub, where attendees sampled house-brewed ales, Italian sparklers and a delicious selection of antipasti. Attendees also toasted Chevalier Harry Robertson who was presented with a large format bottle of 2000 Charles Ellner Champagne to commemorate his 95th birthday. Guests then migrated to the fish and meat counters, where fishmongers and butchers discussed their products and suppliers. Members then ventured to La Piazza, an open restaurant reminiscent of a bustling Italian piazza. An assortment of freshly shucked oysters and crudo were offered from the neighboring station. Next, the tour group traveled to Eataly’s fresh pasta and pizza production areas where outstanding versions of these Italian favorites were served family style in La Pizza & La Pasta restaurant.
For main courses, attendees split into two groups. Half ventured to Il Pesce and Le Verdure, Eataly’s combined fish- and vegetable-centric restaurant. Members dined on pan-seared sea bass with white beans, grilled escarole and salmoriglio sauce. Meanwhile, the other half explored Osteria di Eataly, a recent addition to the restaurant roster highlighting the best from myriad specialized food and beverage stations. The stinco di vitello, slow-roasted veal shank rubbed with rosemary and garlic, was a consensus favorite. While the restaurants were reset for the other group, members convened at the formaggi/salumi counter to learn from informative cheesemongers and salumi experts. An enormous wheel of Grana Padana was expertly opened sending its alluring scent through the air before members sampled the sumptuous artisan offering.
The evening concluded in Eataly’s fine-dining restaurant, Baffo, for dolci and digestivo. Members helped themselves to a generous offering of mini bomboloni, tiramisu, panna cotta with rhubarb and pistachio, and decadent chocolate sponge cake with hazelnut and chocolate ganache. Servers passed beverages and desserts in the bar area as Eataly’s beverage team answered questions. As the evening concluded, members thanked Team Eataly’s chefs and management for their hospitality and departed for summer break with a deeper understanding of Italian gastronomy. Buon Appetito!
Dear Confrères and Consœurs,
Please join us on Monday, June 15, 2015, when Chaîne Chicago “hits the road” for our final Dining Around the World culinary adventure. We will end our 2014-2015 season at the hugely popular, Eataly Chicago.
It all started in January of 2007 in Turin, Italy when an Italian businessman by the name of Oscar Farinetti converted a closed vermouth factory into the first Eataly. It was fashioned after European open markets featuring high-end, high quality products. It is a “culinary funhouse” which is part learning center, grocery store and eatery. One food writer described it as an “emporium of Italian fare, a Disney World for foodies.” Eataly in the United States is owned by a partnership of the Batali and Bastianich families. There are many other locations planned around the world including Boston, Hong Kong, Moscow and Rio de Janiero, to name a few. Thus far, Eataly Chicago is the largest at 63,000 square feet.
The evening will feature a typical Italian style meal from aperitivo through dolce and digestivo. We will begin in the Birreria, the Italian brewpub. The evening will kick-off with samples of house-brewed beers and Italian sparkling wines. During the course of the evening we will sip and dine our way through Eataly experiencing the offerings at La Carne, Il Pesce, La Pizza and La Pasta. We will end our evening in their signature restaurant Baffo for dolce and digestivo. The six-course menu of food and wines have been carefully selected by the Eataly team to ensure a wonderful, authentic experience. The Fish Monger, Butcher, Pizzaioli, Cheese Monger, Salumi expert and other team members will spend time leading us through informative conversations about their products, partners and suppliers.
To effectively run the event as conceived, it is necessary to cap the number of guests. If registration exceeds 40, we will stage the event in two nights – Monday and Tuesday. Please indicate your availability for Tuesday night on the registration form or on your email response.
We are very excited about this unique opportunity. We are looking forward to a truly wonderful evening to close out a spectacular season!
