Located inside Restaurant Michael, George Trois is Chef Michael’s elevated and fresh expression of French cuisine fused with classic and contemporary methods and techniques.
An Homage to Spring
On April 16, 2018, Chaîne Chicago members joined acclaimed Chef/Proprietor Michael Lachowicz for a black-tie “Fête du Printemps” to experience the cuisine of Georges Trois, located within his eponymous restaurant. With snow gently falling outside, our homage to spring may have been premature, but it was warm and welcoming inside this celebrated Winnetka fine-dining establishment.
To accommodate 50 confrères, all festivities were held within the more casual Restaurant Michael rather than the 20-seat George Trois. But make no mistake: the elevated fare served to guests demonstrated Chef Michael’s most sophisticated and fresh expression of French cuisine, fusing classic and contemporary methods and techniques.
The evening commenced with a convivial Champagne reception. Polished servers poured elegant Champagne that paired nicely with passed canapés that included gougères farcies, quail eggs Provençal, and mussels en glaçage.
An extraordinary seven-course dinner followed that showcased myriad luxury ingredients like Golden Osetra caviar, foie gras (paired with a 1995 Château d’Yquem!) and truffles. The oenophilic highlight was a trio of 1988 Bordeaux blends: Château Latour, Château Margaux, and Château Pichon Longueville. Guests relished the rare opportunity to experience each of these 30-year-old gems with a delectable beef and rabbit dish worthy of such esteemed wines.
Throughout the evening, Vice Echanson Honoraire Manfred Raiser provided insightful commentary about the iconic French wines selected from Chaîne Chicago’s fabled cellar. Chef Michael and Conseiller Culinaire Provincial Christopher Koetke, once kitchen colleagues at legendary Le Francais, also provided fascinating observations about the food and wine pairings.
During the event, Conseiller Gastronomique National des Etats-Unis Mon Roldan awarded the Bronze Star to Caviste Jamie Garard for his outstanding service to the chapter. Jaime was responsible for transferring nearly 6,000 bottles from Chaîne Chicago’s cellar to a new storage facility and cataloging them into cellartracker.com. At evening’s end, Mon thanked the outstanding George Trois team for an unforgettable dinner and awarded Chef Michael a commemorative Chaîne plate.
Spring may have been playing hide-and-seek in Chicago, but our members departed with hearts warmed by the unpretentious hospitality and beautifully crafted and refined French cuisine of George Trois.
