Holiday Gala at Maple & Ash

Traditionally, Chicago Chaîne has hosted a French-flavored holiday gala in the city’s finest hotel ballrooms, but on December 14, 2015, forty-eight members enjoyed an all-American seasonal celebration at Maple & Ash, the Gold Coast’s newest and most elegant steakhouse.

Following a convivial Champagne reception in the third-floor lounge, guests moved to M&A’s sophisticated, light-filled atrium in the main dining room with its improbably high-windowed ceiling, dramatic drapery, gorgeous contemporary lighting and festive white-tablecloth surroundings. Baili Mon Roldan introduced Managing Partner Brian O’Connor and Executive Chef/Partner‭ ‭Danny Grant‬‬ (2012 ‭Food & Wine‬ Magazine’s Best New Chef), who had previously hosted the Chicago Chaîne at The Elysian and at Michelin two-star restaurant Ria. Members were delighted to witness the duo’s induction into the Chicago Baillage before the feast commenced. ‬‬‬‬‬‬‬‬‬

Using the steakhouse’s pair of wood hearths, Chef Danny‭ ‬presented waves of extraordinary smoke-kissed offerings, including roasted seafood towers and flame-grilled porterhouse steaks with sophisticated sauces that sated even the most ravenous diners. American wines enhanced the hearty fare.‬‬‬

As the evening concluded, awards and gratitude were given to new inductees Maître Restaurateur Brian O’Connor and Maître Rôtisseur Danny Grant. This holiday gala may have broken with tradition, but all enjoyed a festive atmosphere filled with our Chapter’s friendship and conviviality. Vive la Chaîne!

As the holiday season approaches in Chicago, thoughts turn to jack frost nipping at your nose and chestnuts roasting on an open fire. For our annual holiday gala dinner this year, we’ll escape the cold outside while experiencing the craft of cooking with live fire at Maple & Ash, Chicago’s newest and most elegant steakhouse.
The M&A all-star staff has many old friends skilled at creating celebratory Chaîne events, including Owner Brian O’Connor and 2012 Food & Wine best new chef Danny Grant.  The duo hosted us a number of times at The Elysian and at Michelin two-star restaurant Ria. Chef Grant has perfected flame-grilled prime meats and roasted seafood worthy of this festive occasion using M&A’s open 12-foot wood and coal hearth. And we are consulting with Beard award-winning wine director and Trotter veteran Belinda Chang to create incredible pairings.
In the recent past, Chaîne holiday galas have only been held in hotel ballrooms, so this Gold Coast venue might be a bit unexpected. Rest assured, M&A’s sophisticated, light-filled atrium in the main dining room with its improbably high windowed ceiling, gorgeous contemporary lighting and elegant white-tablecloth surroundings will serve as a memorable holiday venue!
